Recipe time

Yep, I greet you all after a long absence with a quick homemade recipe. I like to think of it as a "gringo" (white person) version of a Mexican favorite: chorizo con huevos (a type of sausage, with eggs). Start with some ground beef, the leaner the better, especially if you are watching the fat content in your diet. The idea is to have a cooked amount that is about the amount of meat you would like to have in a burrito. Add to this one or two eggs in a skillet, go with no yolks to help keep the cholesterol down. As this combination is getting close to done (eggs firming up), throw some salsa on top and mix it up, what ever heat level you are comfortable with. Serve wrapped in a tortilla, and enjoy.
